A lot of a few products or a little of many products?

I need help/opinions about skincare routines, my question is: do you think it's better to use a bigger amount of a few products (for example, just serum and cream) or a little of many different ones (for example a few drops of toner Essence serum cream sleeping mask...)? I have sensitive skin so I usually go for few safe products and use some more pumps of each, but does using even a few drops of different products work better? I also feel like it's less likely for products to expire and that it can help you find in an easy way which product is irritating you. However, does using more products improve your skin faster? Hope my question makes sense in English! Thank youuu

I tend to use different actives on different days! e.g. on Monday I use serum 1 with my usual toner and moisturiser, on Tuesday I will replace it with serum 2, and on Wednesday I’ll come back to serum 1! Alternating is also beneficial if you’re using really potent ingredients and/or high concentrations, so your skin doesn’t become irritated from applying everything at once.

that's a very good approach, I'll keep it in mind if I want to add something new without overdoing it! thank you dear
